French chef Arnaud Lallement (pictured) joined the exclusive group of three-star restaurant owners on Monday as the 2014 edition of the world famous Michelin Guide was unveiled at a ceremony in Paris.
Lallement’s “L’Assiette champenoise”, located in the northeastern town of Tinqueux – in the heart of France’s champagne producing region – was the only restaurant to receive the coveted distinction this year.
It is now one of only 27 establishments in France to boast a three-star rating from Michelin.
“Three stars is the summit of the culinary art form,” Michael Ellis, international director of the Michelin Guide, told chefs and journalists at Monday’s gathering, praising the “subtle mix of flavours and textures” in Lallement’s dishes.
The 39-year-old cook has drawn attention for inventing recipes that are meant to perfectly compliment champagne. His favourite ingredients include prawns and lobsters from the Brittany region.
Another highlight of the event was a first star for the restaurant “Auberge du Vert Mont” in the Nord-Pas-de-Calais region, run by chef Florent Ladeyn, who won acclaim last year as the runner-up in the popular reality television programme Top Chef.
The 2014 edition of France’s Michelin Guide lists 79 two-star and 504 one-star restaurants. It will be available in bookstores on February 28.
