Just days after France's national No Waste Day, FRANCE 24 rustled up some bubble and squeak, went foraging in the forests and hedgerows, and found out how to eat in a more responsible fashion. In Perspective, we spoke to Michelle Skelsgaard Sørensen - the founder and director of the seasonal magazine The Preserve Journal, a publication which aims to help us change our attitudes about how we buy, source, prepare, and eat food.
